Morse et Marteaux is a wood-fired BBQ smokehouse and lobster shack operating four locations in Shediac, New Brunswick. We serve low-and-slow Texas-style smoked meats, Atlantic Canadian seafood, and everything in between. The kitchen runs on real wood, real fire, and an unreasonable amount of patience.
Morse is French for walrus. Marteaux means hammers, the tools of a carpenter. Put them together and you get The Walrus and the Carpenter, from Lewis Carroll’s Through the Looking-Glass. Every business in the Shediac Wonderland family carries a thread of Carroll’s work through its name. This one just happens to smell like brisket.
Yes. Morse et Marteaux is operated by Shediac des Merveilles Inc. as part of Shediac Wonderland, a collection of tourism and hospitality businesses in Shediac. The family includes Le Moque-Tortue (a bistro), Adorable Chocolat (a chocolaterie), Le Griffon (a Victorian bed and breakfast), the Neptune Drive-In Theatre, the Bazar Neptune (a summer Saturday market), the Shediac Renaissance Faire, and Witzend Tours and Adventures. There is an Alice in Wonderland thread running through everything we do.

Four. Each one operates in a slightly different context, but the commitment to wood-fired cooking is the same across the board.
The Parlee Beach and Main & Smith locations operate as full BBQ Smokehouse & Lobster Shack outlets, serving both smoked meats and seafood. The Neptune and Arena locations focus on BBQ.
Main & Smith. It operates seven days a week in the summer and weekends only through the winter. It is the only Morse et Marteaux location where you can get your brisket fix in February.
The Neptune canteen opens on movie nights from Victoria Day (mid-May) through Halloween (late October). We open the canteen at the same time as the gates.
June 1st through Labour Day. Summer hours. Beach hours. The kind of schedule that makes the rest of the year feel like waiting.
During hockey games and tournaments at the Shediac Festival Arena. If there is ice and competition, there is BBQ.

Real Texas-style, low-and-slow, wood-fired BBQ. Brisket, pulled pork, ribs, smoked chicken, burgers, and scratch-made sides. At our Parlee Beach and Main & Smith locations, we also serve Atlantic Canadian seafood, including lobster. The smoker does not rush. Neither do we.
It means the meat is cooked at low temperatures over a long period of time using real wood smoke. No shortcuts. No gas assist. The brisket you eat tonight started its journey many hours before you arrived. This is the Texas tradition, transplanted to the New Brunswick coast.
An authentic wood-fired Texas-style smoker we built ourselves. It is the centrepiece of our kitchen and the reason everything tastes the way it does.
We use local hardwoods selected for flavour and consistency. The specific blend may vary, but the smoke is always real.
No. Lobster and seafood are available at the Parlee Beach and Main & Smith locations. The Neptune and Arena locations focus on BBQ.
The core BBQ menu is consistent across all four locations. The Parlee Beach and Main & Smith locations carry additional seafood offerings. There may be minor variations depending on the venue and the season, but you can count on the fundamentals wherever you find us.

Please inform our staff of any allergies when ordering. Our kitchens handle common allergens including gluten, dairy, nuts, and shellfish (particularly at our seafood locations). We take allergies seriously and will advise you on what is safe to order.
Yes. Smaller portions and child-friendly options are available at all locations.
Yes. Morse et Marteaux provides catering for private events, corporate gatherings, weddings, community functions, and anything else that benefits from wood-fired food served to a crowd.
Yes. We cater events both at Shediac Wonderland properties (including the Neptune Drive-In) and at outside venues. If you can describe the event, we can likely feed it.
Catering menus are customized per event. Options range from a full smokehouse spread (brisket, pulled pork, ribs, sides, the works) to lighter canteen-style service. Seafood options are also available. We will work with you to match the menu to the occasion.
As early as possible. For summer events and large bookings, we recommend reaching out at least four to six weeks in advance. Smaller or off-season events can often be arranged with shorter notice. Contact us at info@shediacwonderland.ca with “Catering” in the subject line.
This depends on the event type and location. Contact us to discuss your needs and we will provide guidance and a quote.
No. All Morse et Marteaux locations operate on a first-come, first-served basis. Walk up, order, eat.
Seating varies by location. The Neptune has the drive-in lot and patio. Parlee Beach has outdoor seating near the canteen. The Arena has arena seating. Main & Smith offers on-site seating. None of our locations require formal table service. This is canteen-style dining.
Yes. We accept cash, debit, and major credit cards at all locations.

Yes, at every location. The Neptune has a 350-car lot. Parlee Beach has the provincial park parking area. The Arena has its own parking facilities. Main & Smith its own parking. You’ll find somewhere to put the vehicle!
Before Shediac Wonderland reopened the Neptune in 2024, the old canteen was gutted and rebuilt as the Morse et Marteaux BBQ Smokehouse. It is where the brand was born. The kitchen opens when the gates do, and the smell of slow-smoked meat drifts across the lot well before the sun sets.
Yes. Morse et Marteaux is the food provider for the Bazar Neptune, the curated Saturday market that runs on the Neptune Drive-In grounds during July and August.
Yes. Morse et Marteaux serves as the food vendor for the Shediac Renaissance Faire, which takes place on the Neptune grounds in late August.
Alcoholic beverage availability varies by location and is subject to provincial licensing requirements. Where available, alcohol is served on-site only. Outside alcohol is not permitted at any Morse et Marteaux location.
At the Neptune Drive-In, dogs are welcome (leashed and well-behaved). At Parlee Beach, provincial park rules apply. At the Arena and Main & Smith, please check with staff. Service animals are welcome everywhere, always.

Because we built a smokehouse around a real wood-fired Texas-style smoker on the coast of New Brunswick, named it after a Lewis Carroll character, and then opened three more locations because one wasn’t enough. The brisket is worth the trip. The lobster is worth the detour. And the story, we think, is worth telling.

Le Moque-Tortue (our board game bistro), Le Griffon(bed & breakfast), The Neptune (our Drive-In Theatre), Adorable Chocolat (our artisanal chocolaterie), Bazar Neptune (Saturday market), Witzend Tours & Adventures (tours, escape rooms, and concierge), and the Shediac Renaissance Faire: each one a chapter of a larger story about what happens when a community decides to take play seriously.
