At Morse et Marteaux, this ancient, wonderfully stubborn device sits at the centre of everything we do. Meats  disappear into its smoky depths and emerge utterly transformed. The flavors? Layered, complex, and frankly a little hard to explain. We’ve stopped trying. We just serve it.

At the heart of the Morse et Marteaux experience is our dedication to the traditional art of smoking meats, central to which is the offset smoker. This classic apparatus, revered among barbecue aficionados, epitomizes the essence of authentic, wood-fired cooking. The wood fire in the offset firebox gently cooks the food in the large upper chamber, infusing it with a distinctive smoky flavor.Our commitment to this time-honored technique is reflected in every succulent bite of our meticulously prepared dishes.

The magic of the offset smoker lies in its ‘low-and-slow’ approach, a method that demands patience and precision. We meticulously maintain low temperatures over extended periods, allowing heat and smoke to envelop the meat gently. This process, sometimes spanning a full day, ensures that the meats (and veggies) gradually absorb the smoky aromas, resulting in a complexity of flavor that cannot be rushed or mimicked.
